Salsa
Quick corn and black bean salsa ...
Start with:
1 can corn, drained (look for “crisp” corn and if you want, mix yellow and white corn for color)
1 can black beans, drained.
Add any of all of the following, according to your taste (the more colors, the prettier):
Diced tomatoes
Diced red peppers
Diced green peppers
Diced Vidalia onion, or red onion
Diced green chilies
Then make a dressing with the following (use a proportion similar to what you would use for a green salad):
Lime juice
Finely chopped cilantro
Minced jalapeño
Pinch of cumin
Garlic (fresh mashed, or powder)
Texas Pete
Salt and pepper to taste
Make ahead and refrigerate until ready to serve.
